Jessica’s Family Favourite: Kare Kare

Turn it into a lifestyle, not a cheat meal.


1tsp oil

¼ onion, diced

1 cup cooked red lentils

1 cup shiitake broth

2 tablespoons peanut butter (natural, no additives)

Salt & Pepper to season

0.5 cup steamed sliced eggplant

1 cup steamed bok choy


Cooked Protein of your choice


Procedure


1. Combine red lentils & broth in a pot, mix and bring to a boil.

2. Turn down to a simmer and allow to cook for 5 minutes.

3. Add peanut butter and mix until smooth.

4. Season to taste.

5. Add eggplant, bok choy & protein.
