Look no further than this Spring Quinoa Salad with Grilled Shrimp!

With plenty of fresh veggies and a zesty vinaigrette, it's the perfect meal for warm weather.

Ingredients:

1 lb shrimp, peeled and deveined

1 cup quinoa, rinsed and drained

1/2 red onion, chopped

1 red bell pepper, chopped

1 cucumber, chopped

1 cup cherry tomatoes, halved

1/4 cup chopped fresh parsley

1/4 cup olive oil

2 tbsp red wine vinegar

1 garlic clove, minced

Salt and black pepper, to taste

Cooking Instructions:

Cook quinoa according to package instructions and let cool.
